Bingsu is the dessert Korea eats through the summer, and the cafe version is usually a wide bowl meant for a table to share. Ours is the portable version of that idea, built on a Korean style slush base and served in a cup, which is how it goes through the drive-thru and into a cup holder.

Five things sit on the slush and each does a different job. Red bean paste is the sweet, earthy anchor. Fruit cocktail brings the acid that keeps the cup from going flat. Mini rice cakes add the soft chew that first timers always comment on. Yakgwa, a traditional Korean honey cookie, gives it something dense to bite. Roasted grain powder is dusted over the top, and it is why the last spoonfuls taste toasted rather than simply cold.

Matcha is available if you want the base greener and less sweet. Push the spoon down the side rather than skimming, and stir once at the halfway point.

Is Cup Bingsu shaved ice?

No. Ours is built on a Korean style slush base, not shaved ice. Shaved ice is dry and flaky and melts into water. A slush base is already part liquid, so it stays spoonable to the bottom of the cup and carries the toppings through instead of separating from them.

What is yakgwa?

Yakgwa is a traditional Korean honey cookie, dense and glossy rather than crumbly. In the cup it softens slightly against the cold, which gives you something to chew besides the mini rice cakes. It is one of five toppings layered over the slush base.
